Herb And Lemon Rice Recipe Ingredients :

1/4 cup chicken broth, low fat & low sodium
1 clove garlic, minced
2 tbsp minced onion
1/4 cup minced carrot
1 1/2 cup short-grain brown rice
3 cup chicken broth, low-fat low-sodium
1 tbsp minced basil, up to 2
2 tsp minced parsley
1 tbsp lemon juice
1/4 tsp lemon rind


Herb And Lemon Rice Recipe Instructions :

Heat the broth in a saucepan over medium-high heat. Add the garlic and
onion and saut‚ for 3 minutes. Add the carrot and saut‚ for 3 minutes.
Add the rice and saut‚ for 2 minutes.

Add the broth, bring to a boil, lower the heat, cover, and simmer until the
water is absorbed, about 40 to 45 minutes. Add the remaining ingredients
and serve.

6 servings/Serving size: 1/2 cup
