2 1/2 cup cooked brown rice 3/4 cup low-fat cottage cheese 1 cup grated reduced-fat cheddar cheese 1 2 ounces jar pimentos, drained and chopped 1/2 cup skim, or 1% milk 1 large tomato, peeled and diced 1 dash paprika nonstick vegetable cooking spray
Fiesta Rice Recipe Instructions :
Preheat oven to 350 degrees.
Combine 1/2 cup of cheddar cheese and all other ingredients except paprika. Stir until well mixed.
Spray casserole with vegetable spray.
Pour in mixture; top with remaining cheddar cheese and sprinkle well with paprika.
Bake 25 to 30 minutes.
