Tropical Muffins Recipe Ingredients :

1.75 c All-purpose flour
Sugar substitute to equal
0.75 c Sugar
2.00 ts Baking powder
0.25 ts Baking soda
0.50 ts Salt
0.25 c Unsweetened grated coconut
3.00 md Ripe bananas, mashed
0.33 c Reduced calorie margarine m
1.00 Egg, beaten
1.00 ts Grated orange rind
0.33 c Unsweetened orange juice
Vegetable cooking spray


Tropical Muffins Recipe Instructions :

Sift together flour, sugar substitute, baking
powder, soda, and salt in a large bowl; stir in
coconut, and make a well in center of mixture.
Combine bananas, margarine, egg, orange rind, and
juice; add to dry ingredients, stirring just until dry
ingredients are moistened.
Spoon batter into muffin pans coated with cooking
spray, filling two-thirds full. Bake at 375 degrees
F. for 25 to 30 minutes or until lightly browned.
Makes 12 muffins.
