Garlic Cheese Casserole Bread (Diabetic) Recipe Ingredients :

1.00 pk Active dry yeast
0.50 c Warm water (110 degrees F)
1.00 c Low-fat cottage cheese
4.00 cl Garlic, minced
1.00 Egg
1.00 tb Olive oil
1.00 tb Oregano
2.00 ts Honey
1.00 ts Salt (optional)
0.25 ts Baking soda
2.50 c Flour
Nonstick vegetable spray


Garlic Cheese Casserole Bread (Diabetic) Recipe Instructions :

Dissolve the yeast in the water.
In a saucepan over medium temperature, heat the
cottage cheese until warm.
Pour the heated cottage cheese into a large mixing
bowl and combine with yeast, garlic, egg, oil,
oregano, honey, salt (if desired), and baking soda.
Add the flour and blend well with wooden spoon or
in a food processor. Batter will be sticky.
Transfer the batter into a large bowl coated with
nonstick spray; cover with a towel and let rise in a
warm, draft-free area for about 1 hour.
Stir with a spoon and turn into a 2-quart casserole
dish coated with nonstick spray. Let rise for 30
minutes.
Bake in a preheated 350 degree F. oven for 40
minutes or until done.
To serve, remove to a platter or spoon out of the
casserole dish. Makes 1 loaf, 20 squares.
